Operators should be adjusting the temperature setting and the duration of the cycle to achieve the DishTemp reading of 160°F (71°C). The temperature reading will vary from machine to machine. Other factors to consider in the adjustment are the frequency of use, the environment where the machine is operating, manufacture brand and age of the machine.
The Food Code suggests the final rinse water temperature to be between 180°F (82°C) and 194°F (90°C). One key benefit of using the DishTemp is that you find that you can adjust your machine to gain some efficiencies. Many operators have found when first using the DishTemp that their actual surface temperature is well above the required 160°F (71°C) and they can turn down their dishwasher thermostats without compromising food safety. Not only is there the potential energy saving, but save on the wear and tear on the dishes, glasses, and cups, from too much heat.
